What do you get when you mix oats & dark chocolate?

Had some oatmeal that needed to be finished. What to do with two cups of oats, other than making a pot of porridge or granola? Why cookies of course. Dessert can be made out of pretty well anything in my world. I like these, they don’t need to be changed at all.

Oats & Dark Chocolate Cookies

2 cups of Rolled Oats (not quick)

1 cup of Whole Wheat Flour

1.5 tsp. baking powder

1 tsp. baking soda

3/4 cup of unsalted butter

1 cup of demerara sugar

1 egg

1.5 TBSP of Honey

8 oz. dark chocolate, roughly chopped

Line baking sheet with parchment.

Preheat oven to 350F

Using a food processor, grind oats to a pulp.

Mix in flour, baking powder, baking soda. Whisk, whisk it good. Cube and add butter to mixture. Add sugar and blend. Scrape down the sides of the food processor. Add the egg and the honey, and blend until it is just mixed. Stir in chocolate.

Yummy.
