The first of the season. Joiner’s corn (is there a different name for this type? This is what we’ve always called it). My in-laws brought some out from their home. Chilliwack is pretty famous around here for their corn. It is sweet and delicious, and I can’t wait for more. I’m pretty plain when it comes to cooking corn. Shuck it. Toss it in a pot of boiling water until cooked through, about 8 minutes. Dash on some salt and pepper, and it is ready to go. BBQ’d corn is my second favourite, cooked right over the fire, while camping out in the woods.
Sure, it isn’t the most complete dinner, but damn it sure is the easiest dinner ever. It is a nice treat. A true sign that summer has arrived.
